Background

Golden Delicious apples have been grown in large quantities since the mid-twentieth century in Südtirol / Alto Adige. The peculiarity of the Südtiroler Golden Delicious IG and / or Golden Delicious of South Tyrol IG spirit drink consists in the choice of the raw material, in carrying out the production phase exclusively in an area of ​​high environmental value such as the Autonomous Province of Südtirol / Alto Adige , in the centuries-old experience of the master distillers and in the continuous improvement of the production cycle.

Production method

Südtiroler Golden Delicious IG and / or Golden Delicious fruit spirit from South Tyrol IG is obtained by distillation of the must of Golden Delicious apples grown, stored, fermented in the Autonomous Province of Südtirol / Alto Adige and distilled by continuous or discontinuous processing plants , on direct heat or indirect steam or after adding water to the still, with the separation of the heads and tails. The origin, in addition to the degree of ripeness of the fruit, has a particular effect on the taste and aroma of the brandy. The South Tyrolean distillers take care of the uniform ripening of the Golden Delicious apple. The cultivation and storage of Golden Delicious apples, the grinding, fermentation, distillation, reduction in degree, possible aging, bottling and labeling must take place in the Autonomous Province of South Tyrol / South Tyrol. The distillation of the fermented, in a continuous or discontinuous plant, must be carried out at less than 86 per cent by volume. Within this limit, the redistillation of the product obtained is allowed. The preparation of Südtiroler Golden Delicious IG and / or Golden Delicious from Alto Adige IG allows the addition of sugars, expressed as a maximum of 20 grams per liter, expressed as invert sugar.

Features

Südtiroler Golden Delicious IG and / or Golden Delicious fruit juice from Alto Adige IG is obtained exclusively from Golden Delicious apple must (Malus domestica Borkh. C.v. Golden Delicious) fermented and distilled directly or by means of water vapor. It has an alcoholic strength by volume of not less than 40 per cent by volume; it must not be added with ethyl alcohol (diluted or undiluted) and it is not flavored. The reduction to grade occurs with drinking water from the Autonomous Province of South Tyrol / Alto Adige or can be performed with softened, but not demineralized, water of the same origin. The water of the Autonomous Province of South Tyrol / South Tyrol is characterized by the particular geological formation of the mountains which gives it a wealth of mineral salts that affect the aroma and taste of the spirit drink. It can be aged in barrels, vats and other wooden containers traditionally known as Lagelen.
