Article 1
Name
The Sabina protected designation of origin reserved for extra virgin olive oil that meets the conditions and standards
requirements established in this production specification.

Article 2
Variety of olive trees
1. The protected designation of origin must be obtained from the following varieties of olives present alone or together, in the olive groves: Carboncella, Leccino, Raja, Pendolino, Frantoio, Moraiolo, Olivastrone, Salviana, Olivago and Rosciola for at least 75%.
2. Olives of other varieties present in the olive groves may also contribute up to a maximum of 25%.

Article 3
Production area
The olives intended for the production of extra virgin olive oil of the Sabina protected designation of origin must be produced in the Sabina area suitable for the production of oil with the characteristics and quality level envisaged by this production specification.
This area includes:
in the province of Rieti all or part of the administrative territory of the following municipalities:
Cantalupo in Sabina, Casaprota, Casperia, Castelnuovo di Farfa, Collevecchio, Configni, Cottanello, Fara Sabina, Forano, Frasso Sabino, Magliano Sabina, Mompeo, Montasola, Montebuono, Monteleone Sabino, Montenero Sabino, Montopoli in Sabina, Poggio Catino, Poggio Mirteto , Poggio Moiano, Poggio Nativo, Poggio S.Lorenzo, Roccantica, Salisano, Scandriglia, Selci, Stimigliano, Tarano, Toffia, Torricella, Torri in Sabina, Vacone.
In the province of Rome, all or part of the administrative territory of the following municipalities:
Guidonia Montecelio, Fonte Nuova, Marcellina, Mentana, Monteflavio, Montelibretti, Monterotondo, Montorio Romano, Moricone, Nerola, Palombara Sabina, SantAngelo Romano, San Polo dei Cavalieri (part), Rome (part).
The production area of ​​the Sabina protected designation of origin is thus delimited in cartography1: 25,000: from a line, which, starting from the northernmost point of confluence of the borders of the municipalities of Cottanello and Configni with the municipality of Stroncone, follows, in an easterly direction, the northern border of the municipality of Cottanello until it meets the border point with the municipality of Greccio; from here the line follows, in a southerly direction, the eastern border of the municipality of Cottanello until it meets the border point with the municipality of Montasola; from this point the line follows, in the south direction, the eastern border of the municipalities of Montasola, Casperia and Roccantica up to the northernmost point of the eastern border of the municipality of Salisano; the line follows, always in a southerly direction, the border of Salisano with the municipality of Monte San Giovannifino to the meeting point with the most western point of the northern border of the municipality of Mompeo; the line continues, therefore, in an easterly direction, along the northern border of the municipality of Mompeo, then continues, in a north-eastern direction, along the northern border of the municipalities of Montenero Sabino and Torricella in Sabina up to the meeting point between the municipality of Torricella Sabina and the western border of the municipality of Belmonte; the line then continues, in a southerly direction, along the eastern border of the municipalities of Torricella in Sabina, Poggio Moiano and Scandriglia to the meeting point of the borders between the municipalities of Scandriglia and License; from here the line continues westwards along the southern border of the municipality of Scandrigliasino to meet the meeting point of the borders of the municipalities of Scandriglia, License and Monteflavio; from here it continues south-east direction, along the southern border of Monteflavio until it meets the northernmost point of the eastern border of the municipality of Palombara Sabina; the line then follows, in a south-west direction, the south-east border of the municipality of Palombara Sabina until it meets the geographical point at an altitude of 475 m a.s.l. from which it arrives, in a south-east direction through the territory of the municipality of San Polo dei Cavalieri, in line on the same altitude, to meet the northernmost point of the eastern border of the municipality of Marcellina in the Caprareccia locality of the municipality of S. Polo dei Cavalieri; the line continues, in a south-west direction, along the border of the municipality of Marcellina and the municipality of Tivoli, until it meets, continuing west, the eastern border of the municipality of Guidonia Montecelio; it follows the eastern border of the municipality of GuidoniaMontecelio, then the southern border of the same municipality and finally the western border of the same municipality until meeting the south-western border of the former municipality of Mentana (today the municipalities of Mentana and Fontenuova); it follows the western border of the municipality of Mentana until it meets the border of the Municipality of Rome from the intersection of via Palombarese with via Nomentana until it reaches the large ring road external roadway direction Settebagni and going up to the S.S. Salaria up to the western border of the municipality of Monterotondo north direction until meeting the southwestern border of the municipality of Montelibretti; it continues along the western border of the municipality of Montelibretti until it meets the confluence point between the southern limit of the western border of the municipality of Montopoli Sabina and the borders of the municipalities of Montelibretti and Fiano Romano; the line continues, therefore, always north direction, along the western border of the municipality of Montopoli Sabina until it meets the southern limit of the western border of the municipality of Poggio Mirteto; from here the line continues, in a north-west direction, along the western borders of the municipalities of Forano, Stimigliano, Collevecchio to the extreme north-west limit of the municipality of Magliano Sabina;
it continues, therefore, in an easterly direction, along the northern border of the municipality of Magliano Sabina until it reaches the extreme north-east limit of the municipality of Magliano Sabina; from here the line continues south, along the eastern boundary of Magliano Sabina until it reaches the border point with the municipality of Montebuono; the line then continues along the northern border of the Municipalities of Montebuono, Torri in Sabina, and Vacone until it reaches the border point with the municipality of Configni; the line continues in a northerly direction along the western border of the municipality of Configni up to the extreme north-western limit of that municipality; the line continues, therefore, in an easterly direction, up to the extreme north-east limit of the common thimble; finally, the line continues southwards until it reaches the northernmost meeting point between the borders of the municipalities of Configni and Cottanello, the point from which the delimitation began.

Article 4
Cultivation characteristics
The environmental and cultivation conditions of the olive groves must be those traditional and characteristic of the area and, in any case, suitable for giving the olives and derived oil the specific characteristics.
Therefore, only olive groves whose soils of calcareous origin are loose, permeable, dry and not arid are to be considered suitable.
The planting layouts, the training systems and the pruning systems must be those generally used or, in any case, suitable for not changing the characteristics of the olives and oil; irrigation is allowed.
Any forcing practice is excluded.
The maximum production of olives / Ha cannot exceed 6,300 kg in specialized olive groves.
For the associated or promiscuous cultivation, the maximum production of olives / Ha is related to the actual olive grove area.
The olive harvest and oil extraction is carried out in the period between 01 October - 31 January of each olive growing campaign.

Article 5
Oleification method
The oil extraction and packaging operations must be carried out within the territorial area defined in the previous art. 3.
The maximum yield of olives in oil cannot exceed 25% by weight.
For the extraction of the oil, only mechanical and physical processes are allowed to produce oils that present the original peculiar characteristics of the fruit as smoothly as possible.
The olives must be washed at room temperature; any other treatment is prohibited.

Article 6
Consumer characteristics
Extra virgin olive oil with Sabina protected designation of origin when released for consumption, must correspond to the following characteristics:
- color: yellow - green with shades of gold.
- smell: fruity;
- flavor: fruity, velvety, uniform, aromatic, sweet, bitter and spicy for the freshest oils;
- panel test: median of the fruity 0 and median of the defect = 0;
- maximum total acidity expressed in oleic acid, by weight, not exceeding 0.6 grams per 100 grams of oil;
- number of peroxides ¢ G 14 Meq0 2 / kg .;
- minimum oleic acid 68%.

Article 7
Designation and presentation
The denomination referred to in art. 1 it is forbidden to add any qualification not expressly provided for by the present product specification, including the adjectives: fine, chosen, selected, superior, genuine.
The use of additional geographical mentions, geographical or toponymic indications that refer to Municipalities, Fractions and geographic areas included in the production area referred to in art. 3.
However, the use of company names, estates, farms, company names, private brands is allowed, provided that they have no meaning and are not such as to mislead the consumer on geographic names and in particular on the names of the areas of production of oils with denomination. of protected origin.
The name of the Sabina protected designation of origin must appear on the label in clear characters, indelible concolorimetry of wide contrast to the color of the label and such that it can be clearly distinguished from the complex of indications that appear on the label.
It is mandatory to insert one of the following words on the label consecutively:
EXTRA VIRGIN OLIVE OIL DOP or EXTRA VIRGIN OLIVE OIL PROTECTED DESIGNATION OF ORIGIN
In addition, the wording oil packaged by the manufacturer at the origin or oil packaged in the production area must also be indicated. The containers in which the Sabina protected designation of origin extra virgin olive oil is packaged for release for consumption must be made of glass, stainless steel metal sheet or ceramic. capacity not exceeding 5 liters.
It is mandatory to indicate, on each package, the progressive n ¢ X issued by the certification body and the production campaign.
The product can also be packaged in single-dose sachets bearing: the protected denomination, the batch, the production campaign and a progressive numbering attributed by the Control Body.
