Production disciplinary of the controlled and guaranteed denomination of origin of wines
Gavi or Courteous to Gavi

Article 1
The denomination of controlled and guaranteed origin Gavi or Cortese di Gavi, already recognized as denomination of controlled origin with decree of the President of the Republic June 26, 1974, is reserved for white wines that meet the conditions and requirements established in this production specification.

These wines are as follows:
Gavi or Cortese di Gavi quiet;
Sparkling Gavi or Cortese di Gavi;
Gavi or Cortese di Gavi sparkling wine;
Gavi or Cortese di Gavi Riserva;
Gavi or Cortese di Gavi Riserva Spumante classic method.

Article 2
Ampelographic base
The denomination of controlled and guaranteed origin Gavi or Cortese di Gavi with the specification quiet, sparkling, spumante Riserva and Spumante Classic method sparkling wine and reserved for wines obtained from grapes coming from vineyards, present in the company, composed only of the Cortese grape variety.

Article 3
Grape production area
The production area of ​​the grapes that can be used for the production of wines with controlled and guaranteed denomination of origin Gavi or Cortese di Gavi, referred to in art. 1, and thus delimited: starting from the extreme north point, corresponding with the intersection between the provincial road Novi Ligure-Gavi and the via Egidio Raggio of the town of Novi Ligure, the delimitation line follows the via Egidio Raggio until the intersection with the state road n. 35-bis. Following the highway n. 35-bis towards Serravalle Scrivia crosses Serravalle Scrivia until reaching the crossroads with the provincial Gavi- Serravalle Scrivia, then along the said provincial road you reach the tunnel near the Grilla farmhouse. From the gallery in the Grilla farmhouse, the area is delimited by the watershed up to the limit of the boundaries between the municipalities of Gavi and Arquata Scrivia.Then the boundary line follows the external borders of the municipalities of Gavi, Carrosio, Bosio, Parodi and S. Cristoforo , including the entire territory of these municipalities in the production area. Following the border between the municipalities of S. Cristoforo and Castelletto dOrba, the boundary line crosses the provincial road S. Cristoforo-Capriata dOrba, until it reaches the border of Capriata dOrba. Then follows the border between the municipalities of Capriata dOrba and Castelletto dOrba to meet again the provincial road S. Cristoforo-Capriata dOrba. Following this road, the boundary line reaches the junction for Francavilla Bisio and continuing along the Capriata dOrba-Francavilla road, it reaches the hamlet of Francavilla Bisio. A short stretch of the Francavilla Bisio-Basaluzzo road follows until the junction with the road to Pasturana in Madonnetta. It follows this road, towards Pasturana, up to the bridge over the Rio Riasco; it follows the course of said Rio, upstream, until it reaches the bridge on the Tassarolo-Novi Ligure road. Then go along the Tassarolo-Novi Ligure road to the junction with the Gavi-Novi Ligure road and then said road until the intersection with Via Egidio Raggio in the town of Novi Ligure.

Article 4
Rules for viticulture
The environmental and cultivation conditions of the vineyards destined for the production of wines with controlled and guaranteed denomination of origin Gavi or Cortese di Gavi must be the traditional ones of the area, and in any case suitable for giving the grapes and the wine derived the specific quality characteristics. Only hilly vineyards of suitable position and orientation and whose soils are calcareous-clayey-marly in nature, with the exception of flat and wet lying areas at the bottom of the valley, should therefore be considered suitable. The planting layouts, the training systems and the pruning system in the new plants must be the traditional ones, and in any case suitable for not changing the characteristics of the grapes and wine. New plants and replantings must have a number of plants per hectare of not less than 3,300. The maximum yield of grapes per hectare of vineyards, in specialized cultivation, destined for the production of quiet, sparkling, sparkling and sparkling Gavi or Cortese di Gavi must not exceed 9.5 tons; for the above types that use the term vineyard, the maximum yield of grapes per hectare of the vineyards must not exceed 8.50 tons; the maximum yield of grapes per hectare of vineyards, in specialized cultivation, destined for the production of Gavi or Cortese di Gavi Riserva and Riserva Spumante classic method must not exceed 6.50 tons. Without prejudice to the maximum limit indicated above, the maximum production per hectare in mixed crops must be calculated in relation to the actual area covered by the vine. For the production of quiet, sparkling, sparkling Gavi or Cortese di Gavi, which uses the mention vineyard, the vineyard, less than seven years old, must have a further reduced hectare yield as indicated below:

in the third year of planting: 5.10 t grapes / ha
in the fourth year of planting: 5.95 t grapes / ha
in the fifth year of planting: 6.80 t grapes / ha
in the sixth year of planting: 7.65 t grapes / ha
from the seventh year of planting on: 8.50 t grapes / ha.

For the production of Gavi or Cortese di Gavi Riserva and Riserva Spumante classic method, the vineyard, less than seven years old, must have a further reduced hectare yield as indicated below:

in the third year of planting: 3.90 t grapes / ha
in the fourth year of planting: 4.55 t grapes / ha
in the fifth year of planting: 5.20 t grapes / ha
in the sixth year of planting: 5.85 t grapes / ha
from the seventh year of planting on: 6.50 t grapes / ha.
In favorable years, the quantities of grapes obtained and to be destined for the production of wines to D.O.C. Gavi or Cortese di Gavi must be reported within the above limit, without prejudice to the grape / wine yield limit for the quantities referred to in the following paragraph, provided that the overall production does not exceed the limit by 20%; beyond this value, the right to the controlled and guaranteed designation of origin for the entire product lapses. The maximum yield of the grapes in finished wine must not exceed 70%. If it exceeds this limit but not 75%, the surplus is not entitled to d.o.c.g .. Over 75% lapses the right to d.o.c.g. for any product. The Piedmont Region, after hearing the opinion of the interested parties, with its own decree, may change from year to year, before the harvest, the maximum production limit of the grapes per hectare for the production of wines with denomination of controlled and guaranteed origin Gavi or Cortese di Gavi is lower than that established by this specification, giving immediate communication to the Ministry of Agricultural, Food and Forestry Policies - National Committee for the protection and enhancement of denominations of origin and typical geographical indications of wines. The grapes destined for winemaking must guarantee wines with a controlled and guaranteed designation of origin Gavi or Cortese di Gavi with a minimum natural alcoholic strength by volume of 11.00% vol for the Riserva and Riserva Spumante classic method, 9.50% vol for the quiet and sparkling types, and 9.00% vol. for the sparkling type. For the latter types, the grapes destined for the production of products that use the mention vineyard must have a minimum natural alcoholic strength by volume of 10.5% vol. The batches of grapes destined for the Reserve must be subject to separate registration and reporting; the reclassification from Gavi Riserva to Gavi Riserva Spumante may take place after the report, in the event of sparkling wine. The batches of grapes destined for the production of Gavi or Cortese di Gavi sparkling wine which do not reach 9.50% vol must be the subject of separate registration and denunciation. The Region, at the request of the Consortium and after consulting the representatives of the supply chain, given the market situation, can establish the suspension or temporary regulation of entries in the vineyard records, for newly planted vineyards that increase production potential.

Article 5
rules for winemaking
The wine-making operations of wines with a controlled and guaranteed denomination of origin Gavi or Cortese di Gavi must be carried out within the production area delimited by art. 3. In winemaking only loyal and constant oenological practices are allowed, capable of giving the wines their peculiar characteristics. The type of wines with denomination of controlled and guaranteed origin Gavi or Cortese di Gavi Riserva requires one year of aging, of which six months of aging in bottle; the aging period runs from 15 October following the harvest to 14 October the following year; the placing on the market is allowed from 1st November of the year following the harvest. The bottling of the wines with controlled and guaranteed denomination of origin Gavi or Cortese di Gavi Riserva and Riserva Spumante classic method must be carried out within the production area delimited by art. The typology of wines with denomination of controlled and guaranteed origin Gavi or Cortese di Gavi Riserva Spumante classic method requires two years of aging starting from 15 October following the harvest, of which eighteen months on the lees in the bottle. The increase in the alcoholic strength by volume of the must or new wine still in fermentation, intended to produce wines with D.O.C. Gavi or Cortese di Gavi must be obtained by means of concentrated grape must obtained from grapes of vineyards of the Cortese variety produced in the area referred to in art. 3, entered in the register of vineyards of the controlled and guaranteed denomination of origin Gavi or Cortese di Gavi, or with rectified concentrated must.

Article 6
Characteristics of wines for consumption
The wines with denomination of controlled and guaranteed origin Gavi or Cortese di Gavi when released for consumption must meet the following characteristics:

Quiet type:
color: more or less intense straw yellow;
smell: characteristic, delicate;
flavor: dry, pleasant, fresh and harmonious taste;
minimum total alcoholic strength by volume: 10.50% vol .;
minimum total acidity: 5.0 g / l;
minimum non-reducing extract: 15.0 g / l.

Sparkling type:
color: more or less intense straw yellow;
smell: fine, delicate, characteristic;
flavor: dry, pleasant, fresh and harmonious taste;
minimum total alcoholic strength by volume: 10.50% vol .;
minimum total acidity: 5.0 g / l;
minimum non-reducing extract: 15.0 g / l.

Sparkling wine type:
color: more or less intense straw yellow;
foam: fine and persistent;
smell: fine, delicate, characteristic;
flavor: harmonious, dry, pleasant;
minimum total alcoholic strength by volume: 10.50% vol .;
minimum total acidity: 5.0 g / l;
minimum non-reducing extract: 15.0 g / l.

Reserve Type:
color: more or less intense straw yellow;
smell: fine, delicate, characteristic;
flavor: harmonious, dry, pleasant;
minimum total alcoholic strength by volume: 11.00% vol .;
minimum total acidity: 6.0 g / l;
minimum non-reducing extract: 17.0 g / l.

Type Classic Method Sparkling Wine Reserve:
color: more or less intense straw yellow;
foam: fine and persistent;
smell: fine, delicate, characteristic;
flavor: harmonious, dry, pleasant;
minimum total alcoholic strength by volume: 11.00% vol .;
minimum total acidity: 6.0 g / l;
minimum non-reducing extract: 17.0 g / l.
And faculty of the Ministry of Agricultural, Food and Forestry Policies - National Committee for the protection and enhancement of designations of origin and typical geographical indications of wines - by decree, to modify the minimum limits indicated above for the wines referred to in this specification for total acidity and net dry extract. In relation to the eventual conservation in wooden containers, the flavor of the Gavi or Cortese di Gavi wine, in the Tranquillo, Riserva and Riserva Spumante classic method, can reveal hints of wood.

Article 7
Labeling and presentation
In the presentation and designation of wines with a controlled and guaranteed designation of origin Gavi or Cortese di Gavi, the addition of any additional qualification other than those provided for in this specification is prohibited, including the adjectives extra, fine, chosen, selected, and similar. The use of indications that refer to names, company names, private brands not having a laudatory meaning and not suitable to mislead the buyer is allowed.
For the still, sparkling, sparkling, and permitted types, the use of additional geographical and toponymic indications referring to the municipalities and hamlets listed in Annex 1 and to the farms, areas and localities, from which the grapes from which the wines are actually originate been obtained, provided that in compliance with the regulations in force on the matter. The indication of the Municipality must appear on the label and in the packaging below the denomination of controlled and guaranteed denomination of origin, reporting exclusively the indication of the municipality of ... possibly followed by the name of the fraction, provided that the grapes come from the indicated territory. The use of additional toponymic indications referring to the vineyards is allowed, provided that the grapes that give rise to these wines are vinified separately and separately recorded in the obligatory cellar registers and in the annual grape production report.
For the Riserva and Riserva Spumante classic method types, the use of geographical indications relating to municipalities, hamlets and localities is prohibited. The use of toponymic indications relating to the vineyard is mandatory. The grapes that give rise to these wines must be vinified separately and separately recorded in the obligatory cellar records and in the annual grape production report.
The mention vineyard must be shown on the label with characters of a size less than or equal to 50% of the font used for the d.o.c.g. Gavi.
For the still type, the year of production of the grapes must be indicated on the label. For the type Classic method sparkling wine, the date of disgorgement must be indicated on the label, while the indication of the vintage for the vintage remains optional.
For the wine to d.o.c.g. Gavi or Cortese di Gavi Riserva Classic method sparkling wine must bear the date of disgorgement and the indication of the vintage for the vintage.
